Hard, unripe avocados are brighter green and should be ripened at room temperature for 3-10 days. Based on your location and transit time, your avocados could ripen faster. Be sure to open your box as soon as it arrives and place your avocados in a bowl on your counter...and wait... rotate them every day...they will turn a darker green as they ripen.
An avocado is ripe when it yields to gentle pressure when cradled in your hand.
Once your avocados are ripe you can store in the refrigerator for approximately 7 days.
After cutting into your Avo, its fresh green color is maintained by brushing with a small amount of lemon or lime juice. Store in a sealed container.
